The Manito Ham Excursion. Randy Stevens (center w/ red hat), Brad Gordon (in grey coat) and I headed down to Manito, Illinois to witness the burying of roughly 200 hams and turkeys to cook. Once a massive fire is built in this pit and slowed to hot embers, the hams are dropped onto the coals. The hams are wrapped in protective coating and are kept on a metal rack. Once in place, doors are closed over the pit and dirt piled upon the doors. Twenty-four hours later, they are removed with juicy goodness. Of course, we kept warm by drinking cold beer that day. Dennis and Uncle Jim cut up some hog heads to make liver sausage as Jack
questionably looks on. Each year, Dennis and I head down to Missouri
to butcher a couple of hogs with our cousins. The event provides us
